Beef Nachos

Beef Nachos

  • Ingredients

    The Mince

    • 500g Hickory Bay beef mince
    • 1 small onion, diced
    • 1 garlic clove, crushed
    • 2 carrots, grated
    • 1 grated carrot
    • 1 tsp onion powder
    • 1 tsp garlic powder
    • 1 tsp cumin
    • 1 tsp paprika
    • 1 tsp oregano
    • ½ tsp coriander
    • 400g tinned tomatoes
    • 2 Tbsp tomato paste
    • 250ml water
    • 1-2 tsp salt (you may need more)
    • 400g tinned beans, if desired (kidney, black, pinto or chilli beans will work)
    • Seasoning to taste

    To serve

    • Corn chips
    • Grated cheese
    • Shredded iceberg lettuce
    • Diced tomatoes
    • Avocado (or guacamole)
    • Sour cream
  • Method

    1. Place onion and garlic and a good glug of oil in a heavy frypan over medium heat until soft. Stir in spices and cook until fragrant.
    2. Add grated carrot and cook for a few mins, followed by mince. Fry mince until evenly browned.
    3. Add tinned tomatoes, tomato paste, water and salt. You can also add beans at this stage if you like ‘em (our kids don’t, so no beans pictured!).
    4. Simmer for around 20-30 mins until liquid has reduced.
    5. Pre heat oven to 180°C. Spread corn chips over a tray and place in oven for 5-10minutes.
    6. Serve into individual bowls (or place mince over corn chips in the tray, if you’d prefer to serve as a communal dish). Sprinkle cheese over top and add other toppings as desired. Dip and rip- delicious!
